Gooey Lemon Butter Cake

Lemon Cake:

  • 1 lemon cake mix
  • 1½ teaspoons lemon zest
  • 1 large egg
  • 1 cup unsalted butter, melted
  • 1 (8 ounce) package cream cheese, softened
  • 2 large eggs
  • 1 teaspoon lemon extract
  • 1 cup butter, melted
  • 16 ounces powdered sugar

For the Cake:

  1. Preheat your oven to 350°F.
  2. In a medium bowl, mix together the lemon cake mix, lemon zest, egg, and melted butter until it forms a smooth batter.
  3. Grease a 9×13-inch baking pan and pat the cake batter evenly into the bottom of the pan.
    For the Filling:
  4. In a large bowl, beat the cream cheese until it’s smooth.
  5. Add the eggs, lemon extract, and melted butter to the cream cheese, and beat until everything is well combined.
  6. Gradually mix in the powdered sugar until it’s thoroughly incorporated.
  7. Spread the filling evenly over the cake batter in the pan.
  8. Bake the cake in the preheated oven for 40-50 minutes. You’ll know it’s done when the edges are golden brown and the center remains slightly gooey.
