Ingredients:
- 2 lbs. carrots, peeled and cut into 2-inch chunks (see notes)
- 2 tablespoons extra virgin olive oil
- ½ teaspoon kosher salt
- ¼ teaspoon fresh ground black pepper
- 3 tablespoons butter
- 3 tablespoons honey
- ⅛ teaspoon cayenne pepper
- ½ tablespoon fresh thyme or fresh parsley
Instructions:
- Preheat your oven to 425 degrees Fahrenheit.
- In a big bowl, toss your carrot chunks with the olive oil until they’re all coated. Sprinkle on the salt and pepper to season them up.
- Spread your seasoned carrots out on a big baking sheet lined with parchment paper. Stick them in the oven and let them roast for about 20 minutes, until they’re nice and tender when you poke them with a fork.
- While your carrots are roasting, get out a large saucepan. Melt the butter in it over medium-low heat.
- Stir in the honey and cayenne pepper, making sure they’re all mixed together nicely. Let them cook together for a few minutes until everything’s all bubbly and fragrant.
- Once your carrots are done roasting, toss them into the saucepan with the honey-butter mixture. Stir them around until they’re all coated and shiny with that sweet goodness.
- Sprinkle on some fresh thyme or parsley to add a pop of herby flavor. Give everything a final seasoning with a bit more salt and pepper, if you think it needs it. And that’s it! Your honey roasted carrots are ready to serve up and enjoy.
