Honey Roasted Carrots

Ingredients:

  • 2 lbs. carrots, peeled and cut into 2-inch chunks (see notes)
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon fresh ground black pepper
  • 3 tablespoons butter
  • 3 tablespoons honey
  • ⅛ teaspoon cayenne pepper
  • ½ tablespoon fresh thyme or fresh parsley

Instructions:

  1. Preheat your oven to 425 degrees Fahrenheit.
  2. In a big bowl, toss your carrot chunks with the olive oil until they’re all coated. Sprinkle on the salt and pepper to season them up.
  3. Spread your seasoned carrots out on a big baking sheet lined with parchment paper. Stick them in the oven and let them roast for about 20 minutes, until they’re nice and tender when you poke them with a fork.
  4. While your carrots are roasting, get out a large saucepan. Melt the butter in it over medium-low heat.
  5. Stir in the honey and cayenne pepper, making sure they’re all mixed together nicely. Let them cook together for a few minutes until everything’s all bubbly and fragrant.
  6. Once your carrots are done roasting, toss them into the saucepan with the honey-butter mixture. Stir them around until they’re all coated and shiny with that sweet goodness.
  7. Sprinkle on some fresh thyme or parsley to add a pop of herby flavor. Give everything a final seasoning with a bit more salt and pepper, if you think it needs it. And that’s it! Your honey roasted carrots are ready to serve up and enjoy.
